The roasters' notes on the bags are actually tasting notes that roasters have discovered while roasting the coffee. Similar to when sommeliers choose tasting notes for wine, the ingredient notes listed on the bags of coffee are not contained in the coffee but rather what roasters are tasting when they sip it!
